Seville Salad with Orange Perfume
¼ cup Spanish Olive Oil
2 Tablespoons Sherry wine Vinegar
Pinch of toasted and ground cumin
Pinch of toasted and ground paprika
Fine Sea Salt and fresh ground black pepper
1 clove of garlic peeled and crushed
1 small red onion cut into slivers
Zest of one orange preferably organic
1 peeled, sliced and seeded orange (use one above)
1 Tablespoon flat leaf parsley
1 tablespoon picked cilantro
12 toasted Marcona Almonds coarsely chopped (whole shelled almonds will do)
6 ea toy box heirloom tomatoes, halved
8 ea pitted Spanish style olives, sliced
2-3oz of crumbled goats cheese preferably Spanish
4 handfuls of tender organic greens hand torn into bite size pieces
2 slices of crusty bread for grilling
Serves 4
Method:
In a serving bowl combine olive oil, vinegar, cumin, paprika, salt, black pepper and lightly beat with a small whisk. Add crushed garlic, onion, olives, cilantro leaves, citrus zest, parsley and almonds. Set aside one hour. Just before serving add mixture to the lettuces, tomato and goat cheese in a bowl and toss gently.
